The Story Behind Nobu Restaurants
The Nobu brand originated from the vision of Chef Nobu Matsuhisa, who began his culinary journey in Japan and later moved to Peru. In Peru, he developed his signature style by blending traditional Japanese techniques with local Peruvian ingredients, creating a unique fusion cuisine. After overcoming various challenges, including a devastating restaurant fire in Alaska, Matsuhisa established his first successful restaurant, Matsuhisa, in Beverly Hills in 1987. It was here that actor Robert De Niro became a regular patron and, impressed by Matsuhisa’s culinary artistry, proposed a partnership to open a restaurant in New York. This collaboration led to the opening of the first Nobu restaurant in Tribeca, New York, in 1994, marking the beginning of a global expansion that now includes numerous restaurants and luxury hotels worldwide.
